The Black Hills of South Dakota are a hidden treasure of gorgeous ingredients and fine lodging, and our class will take place at the High Prairie Lodge (www.highprairielodge.com) where host and owner Teresa Ciani will be our guide and local event planner.

Teri's professional kitchen is beautifully equipped and we'll have great times there, cooking with the finest locally and sustainably produced ingredients. When we aren't cooking, Teri will be our guide to farms and producers, local culture, and monuments like Mount Rushmore, Crazy Horse, and Custer State Park.  Our meals will be relaxed, luxurious, and accompanied by fine cheeses and wines; our time together filled with new and delicious experiences.

You will leave your week with On Rue Tatin in South Dakota with additional cooking techniques and experience, great recipe and menu ideas, a solid knowledge of how to find and use local ingredients wherever you find yourself, and a warm look at a fascinating and beautiful part of the U.S.A.

The three day class includes 4 hands-on classes, 6 meals, tastings, demonstrations, and excursion. The price per person is $1600, exclusive of lodging.

The five day class includes 6 hands-on classes, 8 meals, tastings, demonstrations, excursions and a few surprises. The price per person is $2200, exclusive of lodging.

Autumn in Asheville

Three Day Class September 11-13, 2012
Evening Classes September 11, 12, 2012 

I'm more than thrilled to be returning to Asheville, North Carolina, a small jewel of a city whose food culture is rich in tradition, deep in culture, lively in innovation. With Asheville and its food culture as our backdrop, we will cook together for three days, in a professionally equipped kitchen near the Biltmore mansion. Our ingredients will come from local farms and producers; recipes and wines will be French (with a few Italian accents included), meals will be leisurely. As we cook, I will give you tricks, tips, and hints that I've learned during my thirty year cooking career in France, and you will leave your Asheville experience with a new-found confidence in the kitchen.

Our cooking class will include three hands-on classes, three meals, a field trip to visit an artisan food producer, and many tastes of local products. You will be thrilled and delighted with the quality of cheeses, breads, meats, seafood and local produce, and I will make sure that you leave the class with French techniques, recipes adapted to the home cook, and answers to all your cooking questions.

I will also offer two individual evening classes for those who cannot free themselves during the day.

The price for the three day class, which includes three hands-on classes, three meals, and a field trip with samples is $1,200. The cost for an evening class is $295.
