Four-Day and Six-Day Classes in Louviers
Four-Day Class
Four days at On Rue Tatin in Louviers is a rich, concentrated experience of cooking, learning, tasting, enjoying, laughing. You will work with the season and the region’s finest ingredients then sit down to meals you’ve prepared, all accompanied by fine, small-production wines and artisanally made cheeses.
Four-day classes begin Sunday night with welcome dinner and end Wednesday at 3 p.m.
The fee for a four-day class in Louviers is 1,600 € per person.
Six-Day Class
During six days at On Rue Tatin you’ll find yourself cooking, laughing, enjoying, tasting, as you settle into the rhythm of life in a small French town. You’ll cook with the finest local and seasonal ingredients, meet the locals, get to know the area, and enjoy sumptuous meals, each accompanied by fine, small-production wines and artisanally made cheeses.
Six-day classes begin Sunday night with welcome dinner and end Friday at 3 p.m.
The fee for a six-day class in Louviers is 2,500 € per person.

On Rue Tatin Paris classes are located in the heart of Saint-Germain-des-Près on the Left Bank. In a beautifully appointed professional kitchen we chop, dice, mince, braise and sauté our way through recipes designed for the home cook, then sit down together to enjoy the meal we have so pleasurably prepared. Morning classes begin with a market tour. Evening classes begin with multiple tastings followed by a hands-on class and a lovely candle-lit dinner.
Morning classes: 9:30 a.m. to 2:00 p.m.
Evening classes: 5:30 p.m. to 9:30 p.m.
The fee for a one day class in Paris is 250€ per person.
Guest Eater
You’re on the trip, you love to eat but you don’t want to cook? The Guest Eater program is for you! Join us for all meals and the market visit.
The fee for a guest eater in Paris is 100€ per person.

Mushrooms and More - October 13-16, 2013
Mushrooms and More...an On Rue Tatin tradition! Please, join me and like-minded mushroom fanciers for a deliciously delectable ride through the world of mushrooms. We’ll cook them, powder them, slice them over pasta; we’ll turn them into soups and salads, we’ll roam the local forest with our favorite mushroom guide and bring home basketsful to sauté, braise, grill and feast upon; to top it off, we'll visit a local mushroom cave too. After a mushroom class with me at On Rue Tatin you're likely to be addicted, to everything from morels to death trumpets, to any number of wild and savory mushrooms. Four days, hands-on classes, meals with wines to match!

Kids in the kitchen, a recipe for success!
Put your kids on the road to great eating habits with fun, relaxed times in the kitchen and at the table. Just like the adults, kids will work with seasonal, local ingredients to make French dishes designed just for them. We’ll make a full meal, and sit down together to enjoy it. Minimum age - 12 years old.

Paris Market Tours
Welcome to my Paris Market Tours, for groups of four or more!

For our Paris market tour, we will meet up at a local café over an espresso, then head into a lively Paris market where I’ll show you how to shop for locally produced, seasonal ingredients. We’ll talk about the French dedication to quality and its influence on the world; we’ll delve into seafood and bread, gorgeous spring radishes and crisp winter lettuces; juicy summer fruits and the perfect roast chicken. As we walk we’ll meet vendors and producers, we’ll sample the best that’s to offer, and we’ll get inside the French world of the market, its personalities, its food. You will emerge from our tour with a whole new way of looking at and thinking about ingredients, the people who produce and sell them, and a country that bases much of its worth and reputation on the quality of its food.
The fee for a Paris Market Tour is 110 €.

Autumn in Asheville
Three Day Class October 23-25, 2013

I'm more than thrilled to be returning to Asheville, North Carolina, a small jewel of a city whose food culture is rich in tradition, deep in culture, lively in innovation. With Asheville and its food culture as our backdrop, we will cook together for three days, in a professionally equipped kitchen near the Biltmore mansion. Our ingredients will come from local farms and producers; recipes and wines will be French (with a few Italian accents included), meals will be leisurely. As we cook, I will give you tricks, tips, and hints that I've learned during my thirty year cooking career in France, and you will leave your Asheville experience with a new-found confidence in the kitchen.
Our cooking class will include three hands-on classes, three meals, a field trip to visit an artisan food producer, and many tastes of local products. You will be thrilled and delighted with the quality of cheeses, breads, meats, seafood and local produce, and I will make sure that you leave the class with French techniques, recipes adapted to the home cook, and answers to all your cooking questions.
I will also offer an individual evening class for those who cannot free themselves during the day.
The price for the three day class, which includes three hands-on classes, three meals, and a field trip with samples is $1,200. The cost for an evening class is $295.

Cooking in Los Angeles
July 29-31, 2013
I’ve planned three glorious days of cooking in sunny Los Angeles, just for you! Come join me!
As part of our hands-on class - which will be held in the wonderful kitchen of Martha Rose Shulman, internationally recognized cookbook author, and New York Times Recipes for Health columnist, you’ll learn French techniques, and how to combine flavors, textures, and dishes to make authentic French meals. Whether your favorite dish is roasted fish with pearls of lime, grilled baby eggplant with herbed fresh cheese, a sorbet of blood oranges with pistachios, gorgeous flaky pastry filled with perfectly ripened berries, or heirloom tomato “tubes,” you’ll walk away from our classes with dozens of inspired ideas, and the skills to realize them!
Once the cooking is done, we’ll enjoy meals à la française. You’ll slip easily into the luxury and generosity that implies – apéritifs in the kitchen, followed by multi-course meals at the table, accompanied by local wines, a bite of cheese, a taste of dessert, and a sip of coffee.
When you’ve cooked your way through the menus I’ve carefully prepared just for you, in the company of other like-minded gastronomes, you’ll be a transformed cook, and a transformed eater!
Three delicious days in Los Angeles, $1200 for three classes; $400 for an individual class.
The three day class includes either three morning classes OR three evening classes.

Photography and Cooking October 27-30. 2013
Jumps off the page, doesn’t it?
After three days at On Rue Tatin with internationally recognized food and interior photographer Francis Hammond, your photographs will look this gorgeous too!
Francis is a gifted teacher as well as photographer, with a knack for making the process simple. He will work alongside you, answer every question you have, give you assignments and help you complete them, and make certain that you go home with many visual stories, suitable for publication.
You will cook with me, as much or as little as you’d like, using the best and most gorgeous local ingredients. You can photograph the cooking process from start to finish, and/or take up a knife and get in there to cook yourself. I’ll be ready with all the culinary tips and tricks you could ask for.
After classes we’ll luxuriate in meals that you have made. The results will be stunning, the flavors unforgettable, the wines, the cheeses, the characters memorable.
Photography and Food is a unique opportunity to get hands-on training in both photography and cooking that will give you the confidence you’re looking for. All you need bring is your camera, your laptop, your enthusiasm. We’ll supply the rest!

All About Seafood June 9-12, 2013
Join me for this very special four day class focused on seafood. While we prepare all sorts of dishes to make gorgeous meals, I will share my passion for seafood with you as we steam, sauté, roast, bake everything from sole to squid, to turbot and mussels. We’ll visit a market where you’ll see an amazing array of the freshest possible seafood, much of which we’ll take back to the kitchen and prepare. You will leave All About Seafood knowing how to buy, prepare, and cook seafood like an expert.
